Process 

Using equipment from our state-of-the-art winery, we craft our premium spirits through the process of cold-compounding. Each botanic is carefully sourced and has been selected to bring harmony to the final product. An extended process of maceration tailored to each botanic gently extracts the essential oils responsible for the award winning flavour and aromatics. The spirit is gently filtered to retain its intensity and bottled in dark bottles to protect its flavours and colour from light damage as it sits on your shelf. 

Ingredients 

Spirit 

Surrounded by wheat fields in the heart of Kent, we have selected the finest 100% distilled wheat spirit to form the foundation of our gin. Wheat spirit is known for offering lightness to the overall profile and a gentle sweetness to the palate.  

Oak 

A specific recipe of blended French and American oak designed for vinification and aging has been selected for a complex aromatic profile of vanilla, oak and creamy lactones whilst providing volume and sweetness on the palate with harmoniously extracted smooth tannins. 

Juniper  

Juniper is the key to any gin, and here it offers a fresh fragrance of wood and pine that encapsulates the character of the oak and elevates it. 

Corriander seed, Angelica Root, Black Pepper  

Corriander seeds bring a mellow and spicy aromatic of candied ginger, lemon and sage. Black pepper has a warm stimulating aroma that brings length to the palate and lifts the aromas. Angelica root with its musky, nutty and sweet flavour ties the whole gin together by harmonising the ingredients, softening the edges and balancing the palate.  

 

Tasting notes 

Delectably smooth, with hints of nutmeg  

and vanilla, and a long finish full of  

warming spices.
